Monday: Kale cups, cucumber sticks and yogurt dip
These were a hit. Ella ate a full cup (muffin-cup, that is, not an 8-oz cup), which is a decent serving for a toddler; the others had two or two and a half each. They are also super-easy to make, so I can see this recipe being added to my recipe file.
Tuesday: Spaghetti and veggie-balls
Wednesday: Singapore noodles (tofu and veggies in rice vermicelli with a curry sauce)
Thursday: Half-pita stuffed with lentil-rice balls and shredded veggies of their choice; cucumber raita
Friday: Potato-crust quiche
